've just gotten new iPhone 5 and kind of like idea of fresh start

I do however want my notes from the iPhone 4 backup I have. Is it possible to either restore only portions of the data from my backup, or get at that information somehow? I know I could just restore and then delete anything I didn't want, but I've had the new phone for about a week and like the way I've set this one up.

I got the phone at Best Buy and they transferred my contacts, photos and videos. I almost think I should have just not had them do that. They screwed my contacts up so badly, I'll definitely be syncing with my address book regardless of how this ends up.

Any help is greatly appreciated.
