purchased new iPhone 5 want to sell my old 4s now at

I contacted AT & T and they said my 4s is now unlocked.  They told me to plug up to itunes and restore it,  My questions is why restore it

when I just set it to factory default for next buyer to activate however they want to.  I don't want my profile on it when I sell it.
