Syncing music library from computer to Iphone 5 through Itunes not Cloud or Match

Hello,

How do I sync my music on my Itunes on my imac to my Iphone 5 through itunes instead of downloading the songs over the cloud thorugh my wireless network or worse for someone who isn't aware, using their data up thorugh their cell phone plan?  I have my cellular off.  Seems like it would be much quicker to check the music or playlist you want to download and do it through Itunes like you use to.  Mine doesn't give me that option anymore and the only way I can do it is to do it through my Iphone.  I have a lot of music and this is taking a long time.  Why is this so difficult??  I thought the apple way was easy and intuitive.  This is nothing close.  Very frustrated.
