Reset Phone

I have bought an iPhone 5.  I want to set up my old iPhone4 afresh and buy a sim only plan. How do I return the old iPhone4 to factory state so that I can then use a new sim only plan?  When I sync the old iPhone 4 on iTunes wont iTunes recognise it and try to restore the old phone back to its original state (which I dont want to happen)
